Triple Berry Pie

Bursting with the vibrant flavors of fresh berries, this Triple Berry Pie is an irresistible treat. The buttery crust perfectly complements the luscious filling, creating a symphony of tastes and textures that will leave you craving for more.

Ingredients:

  • 2 cups of fresh strawberries, hulled and halved
  • 1 cup of fresh blueberries
  • 1 cup of fresh raspberries
  • 1/2 cup of granulated sugar
  • 1/4 cup of all-purpose flour
  • 1 tablespoon of lemon juice
  • 1 teaspoon of lemon zest
  • 1/2 teaspoon of vanilla extract
  • 1 package of pre-made pie crust (or make your own from scratch!)
  • 1 tablespoon of unsalted butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • Additional sugar for sprinkling

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the strawberries, blueberries, raspberries, granulated sugar, flour, lemon juice, lemon zest, and vanilla extract. Gently mix until the berries are evenly coated.
  3. Roll out one pie crust and line a 9-inch pie dish. Trim any excess crust hanging over the edges.
  4. Pour the berry mixture into the prepared pie crust, distributing it evenly.
  5. Dot the top of the filling with small pieces of butter.
  6. Roll out the second pie crust and place it on top of the filling. Seal the edges by pressing the top and bottom crusts together and crimping with your fingers or a fork. Cut a few slits on the top crust to allow steam to escape.
  7. Brush the top crust with the beaten egg wash and sprinkle with some sugar for a delightful golden finish.
  8. Place the pie on a baking sheet to catch any drips, then transfer it to the preheated oven.
  9. Bake for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
  10. Remove from the oven and let the pie cool for at least 2 hours before serving, allowing the filling to set.
